Red Tomato and Apple Chutney

Cooking time:    40mins

1 ½ lbs red tomatoes

8oz onions grated or finely chopped

½ pint vinegar - white or brown (I used brown)

1 ½ lbs apples (after peeling & coring)

1 tsp pickling spice

1 tsp salt

1 tsp ground ginger

4oz dried fruit (sultanas are good!)

12oz sugar



Skin the tomatoes

Put onion into a saucepan with 1/8 pint vinegar & simmer until nearly soft

Chop apples and tomatoes, add spice (tied securely in a muslin bag), the salt, ground ginger, dried fruit and just enough vinegar to stop the mixture from burning.

Cook gently until the fruit is soft, stirring from time to time.

Add the remainder of the vinegar and thoroughly stir in the sugar.

Boil steadily until the chutney is thick.

Remove bag of pickling spices and pour the hot chutney into hot jars.

Seal down at once.


Pour chutney into hot jars and seal.
