Cooking time: 40 minsYou will need:2lb plums2-4oz dried fruit1 tbs pickling spice1tsp salt 1tsp ground gingerHalf pint vinegar12oz sugar
Simmer stoned plums, dried fruit, pickling spices (tied securely in muslin bag), salt and ginger in a saucepan with just enough vinegar to stop the mixture burning.
Cook gently until the fruit is soft, stirring from time to time.
Add remainder of vinegar and thoroughly stir in sugar.
Boil steadily until the mixture is thick.
